Lentil Soup (makes 2 batches of soup)

1 C dried Green Lentils or Brown Lentils
1 C dehydrated mixed Vegetable flakes*
1/2 C Long grain rice
1 tsp crumbled Garlic flakes
1/2 tsp dried Thyme
1/2 tsp dried Marjoram
1/2 tsp Salt
1 tsp Pepper

* you can also use fresh or frozen veggies at the time of cooking

Mix all ingredients in a big bowl and store in an air tight container. To make a batch of soup, mix the following ingredients:

1-1/4 C Lentil Soup Mix
8 C Vegetable stock
1/4 C Tomato paste
2 Tbs grated Parmesan cheese
1 Green onion, sliced

In large saucepan, bring stock and tomato paste to boil. Add Lentil Soup Mix; reduce heat, cover and simmer, adding more stock or water if desired to thin soup, until lentils and rice are tender, about 30 minutes. Garnish with Parmesan and green onion. Makes 4 to 6 servings.
