Technically speaking, a cucumber is considered a fruit, but because of its use, most think of it as a vegetable. Cucumbers are a good source of vitamins A and C, as well as molybdenum, potassium, manganese, folate, magnesium, and dietary fiber. In addition, fresh cucumber juice can provide relief from heartburn, acid stomach, gastritis and even ulcers.
