Dark leafy greens – we know they are good for us, but do we eat enough? The Canada Food Guide recommends at least one serving of dark leafy greens each day. At the top of the list of possibilities is spinach.

Rich in calcium, folate, iron, magnesium, zinc, vitamins A, C, E, K, B1, B6, spinach is believed to help maintain bone structure, assist in red blood cell productions, regulate heartbeat, and fight free radicals and so much more.

While having a spinach salad or adding raw spinach to a sandwich is a great way to incorporate dark leafy greens into your day, to get a bigger boost of spinach, cook it up. One cup of cooked spinach equals the nutrition of almost 3 cups of raw spinach.
