Garlic Roasted Yams

A great alternative to high-calory, dressed-up mashed potatoes for holiday meals!

Ingredients

2 lbs Yams, peeled, cut into chunks
10 small Shallots, peeled (or 1 medium Onion, chopped)
2 sprigs of Thyme
2 cloves of Garlic, crushed
¼ C Oil
3 Tbs Honey
1 tsp Lime juice
1 tsp Allspice
Salt and pepper to taste

Instructions

Preheat oven to 400ºF. Arrange yams and shallots (or onions) on a roasting tray and place the thyme all around and between them. Heat garlic, oil, honey, allspice and lime juice in small saucepan on medium heat. Pour garlic mixture over yam mixture and toss to coat. Season generously with salt and pepper. Roast yams until tender, about 40-45 minutes.
