Simple Baked Yams: Scrub and wash yams. Pierce with fork, and bake as you would a potato, until tender. For a unique and rich flavor, roast a bulb of garlic alongside the yams, and squeeze the roasted cloves into the open yams. Mash in the skins, and add rosemary or sage for a savory, festive treat!

Baked Yam Medley: Peel and cut yams into chunks. Place in a lightly-greased baking dish. Add chunks of fruit (chopped apple or pear, or pineapple chunks, if available). Cover, and bake @ 325 F until done (test with a fork).

Sweet Mashed Potatoes: Peel (or scrub well) and chop 2-3 medium yams and 2-3 medium potatoes. Cover with water in a medium saucepan, and add 2 cloves of minced garlic and 1 chopped onion. Boil until tender. Drain the water, and add a bit of olive oil (or butter, or cream!) and tamari or soy sauce, to taste. Mash together, and transfer to a serving dish. Garnish with springs of fresh parsley, thyme, sage, and/or rosemary.
