Mint Relish

Recipe for Category Preserving the Harvest

Ingredients

2 cups packed fresh mint leaves
4 lbs tart apples peeled and cored
4 large onions peeled and cut up
2 large sweet red peppers,seeded and cut up
1 and 1/2 cups seedless raisins
3 cups white vinegar
1/2 cup water
4 cups sugar
2 tsp. salt
2 tbsp mustard seed

Instructions

PUT first 5 ingredients through coarse blade of food chopper.

COMBINE last 5 ingredients in a large kettle. Bring to a boil and boil for 5 minutes. Add chopped ingredients, bring back to boil and boil slowly for 30 min, or until slightly thickened.

LADLE into hot sterilized jars and seal immediately. Makes 7-8 pints.
