Ingredients

3 Tbs Butter or Olive Oil
½ Green pepper, diced
3 Medium Potatoes, peeled and sliced or chopped
½ C Onion, chopped
½ C Broccoli, diced
Salt and pepper, To Taste
4 Large Eggs, beaten
4 Green onions, sliced
4 oz Cheddar cheese, shredded

Instructions

In a frying pan, melt butter or warm oil over medium heat. Sauté vegetables and seasonings for 3 minutes. Cover and cook over low heat until the potatoes are tender, about 30 minutes. Pour eggs over vegetables. Do not stir. Cover and cook until eggs are set, about 10 minutes. Sprinkle with cheese. Heat only until the cheese melts. Cut into wedges and serve.
