Fruity French Toast Tortilla Wraps

Ingredients

4 Tortilllas
2 eggs or substitute equivalent
1 C Soy or Cow’s milk
Ľ tsp of Vanilla
1 C of fresh fruit (or pie filling for a sweeter dish)
Powdered sugar (optional)

Instructions

In a shallow pie plate, mix together eggs, milk, and vanilla. Heat a skillet until hot (may be best to spray with non-stick cooking spray). Place the tortilla in egg mixture, gently turning to coat both sides. Place in hot skillet and cook 1-2 minutes per side until golden brown. Remove from the pan and place on a plate. Fill with fruit and roll it up. Sprinkle with powdered sugar and serve. (Any sweet crepe-filling can be substituted for the fruit filling in this dish).
