Millet Breakfast Cereal with Mandarin Oranges & Dates

Ingredients

2/3 cup millet, rinsed and drained
1 ½ cups orange juice
2 cups water
4 large dates, pitted and chopped
1-3 mandarin oranges, peeled, sectioned and diced
1 cinnamon stick
½ tsp green cardamom pods
pinch of salt
1 tsp butter (optional)

Instructions

Dry toast the millet over medium heat, stirring constantly for 3 minutes. Add orange juice, water, dates, cinnamon, cardamom, butter, if desired and a pinch of salt. Bring to simmer. Cover and cook for 40 minutes or until all liquid is absorbed. Stir a couple of times during cooking to avoid sticking and to add liquid if necessary. Stir in mandarin oranges and serve. Serves 4.
