Breakfast Tortillas

Great way to include veggies in your breakfast or brunch menu! Quick and easy too!

Ingredients

4 cups finely chopped, mixed vegetables of choice (eg broccoli, carrots, chard, cauliflower)

3 small leeks, diced
1/4 cup diced bell pepper
4 free-range eggs
1/2 cup grated white cheddar cheese
2 cups chopped lettuce
4 large whole wheat flour tortillas

Instructions

Saute mixed vegetables in a large skillet until tender. Remove from pan and set aside. Saute onions and peppers in skillet until tender. Add eggs and scramble. Cook, scrambling periodically, until done. Place tortillas in a 200 F oven until warm. Spread egg mixture on tortillas. Top with vegetables, cheese, and lettuce. Turn up bottom of tortillas and roll up sides to make a tight wrap.

(Optional) Top filling with salsa, plain yogurt, sour cream, or favorite salad dressing.
