Grape Rosemary Focaccia

Ingredients

Prepared pizza dough*
1 tsp Olive oil, divided
1 clove Garlic, minced; divided
1 C Ontario Coronation Table Grapes, washed, stemmed, halved; divided
2 Tbs coarsely chopped fresh Rosemary, divided
1-2 tsp coarse Salt

Instructions

Cut dough in half; roll and stretch each half to a 15-inch (38 cm) x 6-inch (15 cm) rectangle. Place one rectangle on baking sheet; brush with half of oil and sprinkle with garlic. Top with half of grapes and rosemary. Place other dough rectangle on top and seal edges firmly.
Prepare pizza dough (see recipe below).

Brush top with remaining oil; sprinkle with garlic, grapes and rosemary. Let rise in a warm place for about 40 minutes or until slightly risen.

With fingertips, press indentations into dough to give dimpled surface. Sprinkle with salt. Bake in 400°F oven 20 to 25 minutes or until golden brown. Serve warm, cut into slices.

*Whole Wheat Pizza Dough

1 C warm Water
1 tsp dry active Yeast
4 tsp Honey
2 C Whole wheat flour
1/2 C All purpose flour
1/2 tsp Salt

Place the yeast and honey in a large mixing bowl and pour the heated water over the mixture, stirring until well blended. Let the mixture stand for about 5 - 7 minutes until foamy.

Add the whole wheat flour, all purpose flour and salt and stir with a fork until a coarse dough forms. Continue to mix by hand until a dough ball forms and all the flour is well blended. Cover the bowl and place it in a sink with about 4 inches of hot water in the bottom. The heat from the warm water will help the dough rise. The dough will double in size in about 30 – 40 minutes.

Punch it a few times with your fingers and let it rise another 30 minutes. Cover the dough that you are not going to use immediately in plastic wrap and chill.
