Irish Tea Bread

Ingredients

1 C dried pitted Dates
1 C dried Cranberries
1 C strongly brewed Echinacea-Mint tea (or tea of choice)
1/4 C Honey
1 tsp Baking powder
2 C All-purpose flour
1 large Egg
2 Tbs Milk
1 tsp Lemon juice

Instructions

Place the dried fruits in a large bowl. Stir in the tea, followed by the honey. Cover and let sit overnight to give the fruit time to absorb the liquid and honey. Preheat the oven to 350F. Grease a 9 X 9-inch square pan or a large loaf pan. Sift the baking powder into the flour. Lightly beat the egg and add the milk and lemon juice. Combine the beaten egg and the flour with the fruit, mixing thoroughly. The mixture should be thick enough to stick to a wooden spoon but not overly dry. Spoon into the pan. Bake at 350F. for 45 minutes to 1 hour, or until a wooden pick inserted in the middle comes out clean. Cool on a wire rack for 5 minutes and serve.
