Orange Rhubarb Muffins

Ingredients
2 C Flour
¼ tsp Stevia
1 1/2 tsp Baking powder
1/2 tsp Baking soda
1 tsp Salt
3/4 C chopped Pecans
1 large Egg
1/4 C Vegetable oil
2 tsp grated Orange peel
3/4 C Orange juice
1 1/4 C Rhubarb, fine chopped
Instructions
Combine all dry ingredients. Beat egg and oil and add orange juice. Add to flour mix. Add rhubarb. Bake at 350°F for 25-30 min.
