Celeriac and Cheese Bread

Ingredients

¾ C self- raising Flour (or add 3/4 tsp of Baking soda and 1/4 tsp of salt to 3/4 C flour)
4 Chives, finely chopped
½ C Feta cheese, roughly crumbled
1/8 tsp Cayenne pepper
¾ C peeled Celeriac
1 large Egg
2 Tbs Milk
1 tsp Salt

Instructions

Preheat the oven to 375°F. Sift the flour into a large mixing bowl and add the chives, two thirds of the crumbled cheese, cayenne pepper and salt. Grate in the celeriac using the coarse side of a grater. Mix everything together well. Beat together the egg and milk and gradually add it to the mixture until you have a loose rough dough. Grease a small baking tray. Put the dough onto the baking tray and shape it into a round with your hands. Lightly press the rest of the cheese over the surface and sprinkle with a little flour. Bake on the middle shelf of the oven for 40-45 minutes until golden brown. Cool on a wire rack and eat as soon as possible.
