Lowfat Carrot (or Zucchini) Bread

1 C Sugar
¾ C Applesauce, unsweetened
1 C Whole wheat flour
½ C Flour
1 tsp Baking soda
1 tsp Baking powder
1 tsp Salt
1 tsp Allspice
1 tsp Cinnamon
1 C Carrots, shredded (or zucchini)
1 tsp Vanilla extract
2 Eggs (or equivalent of egg substitute)
¼ C Walnuts, chopped (optional)


Preheat oven to 350º F. Grease and flour a loaf pan or small ring pan. Mix sugar and applesauce in a large bowl. Combine dry ingredients and add to wet mixture. Add carrots and vanilla. Beat in the eggs one at a time. Mix well. Stir in the optional nuts and raisins. Pour into the pan and bake for 50 minutes, or until a toothpick inserted in the bread comes out clean. Variation: Add 1/2 cup crushed pineapple (in juice, drained) to the batter.
