Lemon Basil Muffins

1C Unbleached flour
1C Whole wheat flour
3tsp Baking Powder
¼ C Sugar
1C Milk
1 Egg
1 Tbs Oil (olive or canola)
3 Tbs apple sauce or plum flavoured baby food
¼ C Basil leaves (chopped)
1 Tbs Lemon juice and the rind of one lemon


Preheat the oven to 400°. Grease the bottoms of 12 muffin pans or line with cupcake papers. Combine flours, baking powder and sugar. In a separate bowl, whisk together milk, egg, oil, and lemon juice and rind. Pour the wet mixture into the dry mixture and stir until all the flour is moistened. Bake for 20 minutes or until a toothpick comes out clean (makes 12).
