Sweet Potato Pudding

Ingredients

1/4 C Oil
2 Eggs
4 C grated Sweet potatoes
2 C light cream or buttermilk
1 tsp Vanilla
1 tsp grated Orange peel
1/2 tsp Nutmeg, grated

Instructions

Preheat oven to 350°F. Beat the eggs and oil together in a large bowl. Add the rest of the ingredients and mix together well. Grease a shallow glass or ceramic baking dish and pour the mixture into it. Bake for 1 1/2 hours. The top should be golden brown and the center firm to the touch.
