Chilled Spiced Rhubarb

Ingredients

4 C fresh Rhubarb
1/2 C Water
1/4 C Vinegar
½ tsp Ginger
½ tsp Cinnamon
1/4 tsp Cloves
¼ C Honey
1 Orange (peeled, seeded, and chopped)

Instructions

Wash and cut rhubarb in 1-inch pieces. Place in a large pan with all other ingredients except the honey. Cover and simmer on stove 20 to 25 minutes or until rhubarb is sauce. Add the honey and let cool. Chill before serving. Makes 4 cups.
