Carrot Cake with Stevia

Ingredients

3 Eggs, beaten
¾ C Unsweetened applesauce
¾ C Milk + 1 Tbs Vinegar (replaces buttermilk)
½ tsp Stevia powder
2 tsp Vanilla extract
2 tsp ground Cinnamon
2 tsp Baking soda
2 C Spelt flour (whole wheat, soy, or oat flour can also be used)
½ tsp Salt
1 can 8oz. crushed pineapple, undrained
2 C grated Carrots

Instructions

In a mixing bowl, combine eggs, applesauce, milk and vinegar mixture, stevia and vanilla. Mix well. Combine flour, cinnamon, baking soda, and salt, and stir into egg mixture. Stir in pineapple and carrots. Pour into a greased and floured 13 x 9 x 2 inch baking pan. Bake at 350ºF for 30 minutes (check using the tooth pick method). Remove to wire rack to cool.
