Swiss Chard Fritatta

Ingredients
Butter
Onion
Potato
Chard Leaves
Parsley or Thyme
Pepper
6 Eggs
3 Tbs Milk
Instructions
In cast iron skillet, saute: 1 Tbs butter, 1 small onion, minced, 1 medium potato, cubed and parboiled for 5 min.
Add and saute a few more minutes, until bright green and reduced in bulk: 2-3 large chard leaves, stemmed and chopped, parsley or thyme, black pepper
Beat together: 6 eggs + 3 Tbs milk/soymilk
Make sure sides of pan are coated with butter. Pour egg mixture into pan, and bake at 325F for 20 minutes until firm.
