Layering Greens into your Diet!

Often people ask us what to do with their greens - especially the more "unpopular" varieties, such as chard, beet greens, kale, collards, etc.

We like to eat ours as part of a regular meal - here's how we do it:

1. Rinse one bunch of kale (or any variety of greens) well, remove stems, and chop finely.
2. Trim half a bunch of broccoli - peel and chop the stalks, and chop the florets.
3. Steam the broccoli briefly, then add the finely chopped kale (or other greens).
4. Steam until both are bright green and tender (don't overcook!).

Here are some meal ideas with greens:

**If serving pasta: dish up the pasta, then a green layer, then the sauce.

**If serving a creamy curry: dish up your rice (or other grain), then a green layer, then the curry with sauce.

**If serving soup or stew: dish up your green layer first and top with the soup or stew.

**For our 1-year old: we blend the greens with an orange veggie (yams or carrots), quinoa (or brown rice), flax meal (or oil), and yogurt (or fortified rice milk), for a tasty and nutritious meal. He loves the sweet taste of greens!
