Mexican Chard & Potatoes

Ingredients

1 tbsp. vegetable broth, for sautéeing
1 small onion, chopped
2 jalapeños, chopped
½ cup pureed tomatoes
4 medium potatoes, diced small
1 cup vegetable broth
salt to taste
half a bunch (approx 4 oz) chard, sliced in 1" strips

Instructions

Cook onion and jalapeños in 1 tbsp. broth until soft. Add tomato puree and cook on low heat for 3-4 minutes. Stir in potatoes, broth and salt. Cover and cook for 15 minutes. Check liquid periodically and add more if necessary. Add chard. Cover and cook over medium heat for 15 minutes.
