Beet greens perish quickly, and should be stored separately from the beets, in a plastic bag in the refrigerator. They should be eaten within 2-3 days.

Beet greens are delicious lightly steamed, and tossed with olive oil, balsamic vinegar, and a sprinkle of basil or dill. They look and taste great in an omelet, lasagna, or stir- fry.

For maximum nutritional value, chop raw beet greens into a salad, or JUICE them - YUM!!
