Squash with Ricotta, Walnuts & Honey

1 Delicata Squash
2 C Ricotta Cheese
½ C Walnuts (toasted)
2 Tbs Honey
2 tsp Salt
4 Tbs Butter


Cut squash into quarters,clean out seeds and stringy interior, and lightly salt the cavity. Place on baking sheet and place one tablespoon of butter in each cavity. Bake 30-40 minutes in a preheated 375°F oven. Bake until squash is soft throughout when pierced with a fork. Cool to room temperature. Mix salt and ricotta until well blended. Fill each cavity with 1/2 cup of ricotta mixture. Place on a plate, lightly drizzle with honey and sprinkle with walnuts. Serves 4
