Basic Guacamole

Here's a simple recipe for guacamole, with just a few ingredients. It might not be the one that you do for a fancy potluck, but it's great for dipping veggies or corn chips for a simple lunch or snack with kids.

Ingredients

2 avocados (halve the recipe if you're only using one)
1-2 fresh cloves of garlic (start with just a tiny bit, if you're making this for kids!), minced finely
2-4 Tbsp fresh lemon juice
pinch of salt
pinch of black pepper
plain yogurt (optional - see note below)

OPTIONAL ADDITIONS:

1/4 tsp cumin powder
handful of fresh cilantro leaves, finely chopped
1/4 cup red onion, minced
2 roma tomatoes, peeled, seeded, finely chopped

Instructions

Cut the avocados in half and squeeze out the flesh into a bowl. Add the salt, pepper, lemon juice, and a small portion of the finely minced garlic. Mash together until smooth and creamy. Taste (or offer to your kids!), and add extra garlic if desired.

For a creamier taste, and to make the guacamole go a bit further, we often add a dollop or two of plain yogurt as well.

Add any of the optional additions, if you wish.

Serve with a plate of fresh, chopped vegetables, and/or organic corn tortilla chips, or rice cakes or crackers.
