Spicy Rhubarb Chutney

Ingredients

1/3 C Cider vinegar

¾ C Sugar (this amount can be cut down or substituted)

2 Tbs fresh Ginger, finely minced

2 Tbs Garlic, finely minced

1 tsp Cumin

½ tsp Cinnamon

½ tsp Cloves

¼ - ½ tsp Hot red pepper

6 C ½-inch chunks Rhubarb (about 2 pounds)
½ C Onion, chopped
1/3 C dried tart Cherries or golden Raisins

Instructions

Combine the first eight ingredients in large heavy saucepan. Bring to a simmer over low heat, stirring until the sugar dissolves. Add rhubarb, onion, and dried cherries; increase the heat to medium-high and cook until the rhubarb is tender and the mixture thickens slightly, about five minutes. Cool to room temperature. Brush meat of your choice or veggies with the chutney and bake or grill. Or serve the chutney as a side to any dish. Makes 4 cups.
