Italian Cabbage and Bean Soup

1 tsp Olive oil
1/2 C chopped Onion
1/2 C chopped Celery
1/2 C sliced Carrot
1 Garlic clove minced
1 1/2 C shredded Green cabbage
1 C diced Tomatoes (with liquid)
1 C cooked White beans
4 C Vegetable broth
1 Tbs chopped Parsley
freshly ground Black pepper


Heat oil in large saucepan. Add onion, celery, carrot, garlic, and green cabbage. Cook slightly. Add tomatoes, beans, and broth. Cook until veggies are tender. Add parsley and pepper to taste.
