Caldo Verde (Green Soup)

1 bunch of Curly Kale, very finely shredded (remove the hard central core from the leaves)
4 medium Potatoes, peeled
1 clove Garlic
1 small Onion, finely chopped
2 Tbs Olive oil


Prepare the kale as above. Cook the potatoes with the garlic and onion in salted water until the potatoes are tender. Remove the potatoes and garlic and then mash roughly with a fork. Return to the broth with the olive oil and kale. Bring back to the boil and cook for about 5 minutes - the kale should retain some bite. Ladle into bowls and serve.
