Leek, Lentil and Rice Stew

1 1/2 C Leeks, sliced
1 1/2 C tsp Olive oil
2 cloves Garlic
1/2 C Brown rice
2 C Water
1/2 C cooked Lentils
1/2 tsp Salt
1/4 tsp Pepper


Cook leeks in olive oil over medium heat, 3 to 5 minutes, stirring often. Add minced garlic and brown rice; sauté until rice looks opaque. Add water, salt and pepper. Bring to a simmer over high heat, and then reduce heat to low, cover, and cook for 10 minutes. Add lentils to pot and cook 20 to 25 minutes until rice and lentils are tender and water is absorbed.
