Chilled Beet, Orange and Dill Soup

1 Bunch Beets
1 1/2 C Fresh orange juice
1 1/2 C Milk (of your choice)
3 Tbs fresh Dill, chopped
1 1/2 C Cucumber, finely diced
Additional chopped fresh dill


Steam beets and reserve ¾ C of the water. Combine half of beets, half of reserved water and half of orange juice in a blender. Blend until smooth. Blend in half of milk and 1 1/2 Tbs chopped dill. Transfer to large bowl. Repeat with remaining beets, reserved water, orange juice, milk and 1 1/2 Tbs dill. Season with salt and pepper. Chill at least 3 hours. Garnish soup with cucumber and additional dill. Ladle into bowls.
