Curried Zucchini Soup

Ingredients

1 ¼ lbs Zucchini, trimmed and coarsely chopped
½ tsp Salt
3 C Veggie broth
1 tsp white Pepper
1 medium Onion, chopped
2 Tbs Oil
2 cloves Garlic, minced
½ C Milk
1 tsp Curry powder

Instructions

Heat the oil in a large, heavy soup pot. Stir in the zucchini, onion, and garlic and sauté until the vegetables are soft, about 10 minutes. Stir in the curry powder, salt, pepper, and 2 cups of broth. Remove from heat and cool enough to handle. Puree the mixture in a food processor or through a food mill and return to the pot. Stir in remaining cup of broth and the milk or cream. Reheat over medium heat without boiling, then serve.
