Non-Dairy Cheesy Vegetable Soup

2 medium Onions (diced)
1/3 C Olive oil
10 C Water or Vegetable Stock
2 Tbs Salt
¼ tsp Black pepper
½ tsp Celery seed
½ C dry Textured Vegetable Protein (TVP) (available at most grocery stores and health food stores)
2 tsp Soy sauce
2 C sliced Carrots
1 C chopped Celery
1 C Nutritional Yeast Flakes
3 Tbs Butter
4 C of cooked Noodles OR 3 C cooked Rice


Sauté onions in olive oil. Add to water or stock, salt, pepper, celery seed, textured vegetable protein, soy sauce, carrots, and celery. Simmer for 10-15 minutes until vegetables are tender. Stir in nutritional yeast flakes, butter, and noodles or rice.
