Lisa's No-Fail Beet Borscht

2-3 Tbsp olive oil
1 chopped onion (or 2 sliced leeks)
2-4 cloves garlic
2 1/2 cups peeled & chopped beets
2 1/2 cups scrubbed & chopped potatoes
2 1/2 cups chopped cabbage
2 tsp honey (optional)
juice of 1 lemon
1/2 tsp salt
1/4 tsp black pepper
2 Tbsp fresh, chopped dill
5 cups vegetable stock or water


Saute the onions, garlic, beets, and potatoes in oil over medium heat for about 5 minutes. Add the cabbage, honey, lemon juice, spices and liquid. Simmer, covered, for at least 30 minutes, until vegetables are soft, and flavors have blended. Add fresh dill before serving. Serve with a dollop of yogurt, fresh, crusty bread, and a salad for a simple meal!
