Black Eyes with Greens & Millet

Ingredients

1 medium onion, sliced
2 cloves garlic, mined
5-1/2 oz vegetable broth
3 tbsp red wine vinegar
6 cups coarsely chopped kale
2 large tomatoes, cut in wedges
15 oz black-eyed peas, drained
1 cup millet
2 tbsp finely chopped cilantro
salt and pepper to taste

Instructions

Spray a large pan with olive oil, heat over medium heat until hot. Saute onion and garlic until tender. Add broth and vinegar, heat to boil. Add greens and tomatoes, reduce heat and simmer until greens wilt. Stir in peas and millet, simmer, covered, until all liquid is absorbed. Remove from heat and let stand 5-10 minutes. Stir in cilantro and season to taste. Serve with red pepper sauce if desired.

Serves four, 360 calories per serving. 12 grams protein per serving.
