Whole grains are packed full of fiber, protein, vitamins, and minerals, but they are not all the same. Choosing the best whole grains for you is made easier by the Centre for Science in the Public Interest (www.cspinet.org/nah/canada.htm). Based on five nutrients and fiber, they have come up with a scoring system. Three of their “Best Bites” are quinoa, amaranth, and buckwheat groats. Quinoa is toted as having one of the highest protein content of any grain, yet it is light and easily digested. Although not a true grain, amaranth is high in protein, especially in the amino acid lysine. It also has a high fiber content and contains significant amounts of phytosterols, vitamins, and minerals. Buckwheat groats are high in protein, B vitamins and are rich in phosphorus, potassium, iron, and calcium. It is a soft quick cooking grain with an earthy flavour.
