Who says that a “salad” has to be full of lettuce and small pieces of vegetables? If you are watching carbs, your weight, or just wanting to eat healthy, why settle for a salad of just lettuce and little taste?
Chunky salads are a great way to enjoy the bountiful fruit and vegetables this summer. The difference between chunky salads and “regular” salads is that with a chunky salad, each bite has a different taste. Instead of eating a forkful of lettuce and the same combination of different vegetables, a chunky salad has a unique taste in every bite.
The key to chunky salads is to, of course, keep the vegetables or fruit, bite size. Also, experiment – it’s exciting to come up with new combinations. Sweet and tangy, sharp and mild – there are all kinds of recipes to be discovered. For an additional treat, try mixing fruits and vegetables in the same salad. And don’t stop there – add meat, cheeses, and nuts. Remember, the chunkier, the better. And, kids love them too!
