What a bold herb we have this week! Cilantro is not known for its mild flavour, but rather its aromatic and savory taste. Although, cilantro is actually the leaf of a young coriander plant and a member of the parsley family, its flavour is much different than either of these.

Traditionally, cilantro is used in Middle Eastern, Mexican, and Asian cooking. It is thought to be one of the first herbs used by humans and was one of the first spices to arrive in America.

To use cilantro to its fullest potential, the leaves should be crushed either by hand or with a mortar and pestle. Chopping the leaves with a knife or scissors will also help to release the flavour of this herb. Some of the many uses of cilantro include salsas, chutneys, salads, dips, beans, and soups.
