"Spring Beauty" (Claytonia)

“Spring beauty” is another name for this week’s delicious salad green Claytonia. This fleshy perennial, a member of the Purslane family, includes native species that can be found within the Okanagan. “Miner’s Lettuce” is the most common within our valley, usually found in moist open areas or shady thickets. It can be recognized by its tiny five-petaled white flowers, which grow out of the main single disk-like leaves. The leaves are the tastiest part of the plant, although in other Claytonia species, the roots can be eaten as well. The leaves are a good source of Vitamins A and C and provide taste and appeal to any salad. So, the next time you are out hiking in the Okanagan, keep your eye open for this beautiful and tasty plant.
