Acorn squash, a winter squash native to the Americas, has nutty and sweet flavour. When fully ripe, acorn squash can weigh one to three pounds. The ripeness of this squash can be evaluated by the colour of the skin. A smooth, dull green skin with partial orange indicates a ripe healthy squash. The shinier they are, the earlier they were picked. Those that have more orange on the skin may be more mature and possible over ripe.

How do you store this squash? Below is a handy guide to storing acorn squash. Another helpful hint to help keep the squash moist is to keep its stem intact. This will help prolong the life of the squash and make it moist and tender.

Storage tips:

Uncooked, uncut acorn squash in a dark cellar or storage area: 1 month

Uncooked, uncut acorn squash in the refrigerator: 2 weeks

Uncooked, cut acorn squash in the refrigerator: 4 days

Cooked acorn squash in the refrigerator: 4 days

Cooked acorn squash in the freezer: 10 to 12 months.
