Beets Grate into salads or veggie wraps! Use in soups and stews for a beautiful flavor and color! Steam, and serve with a bit of butter or olive oil and fresh herbs!

Spinach Rinse and wash well to start... Serve fresh in salads! Steam as a side dish! Feature in quiche, veggie pies, curries, stir fries, or veggie lasagna! (See 'Classic Spinach Lasagna' recipe in Main Course Dishes category.)

Baby Bok Choy Separate bok choy leaves and rinse under cold water to clean... Steam and serve cold with noodles and a Thai peanut sauce! Add to stir fries, sautes, gado gado, or a host of other Asian-themed dishes!
