Throughout its history, cabbage has been worshipped and loathed many times over. In ancient times, the Romans and Egyptians used cabbage to prevent and cure hangovers. The ancient Chinese dried and pickled cabbage as an accompaniment for meals, and the Scandinavian Vikings used it because it was easy to dry and store for the harsh winters. However, in the Middle Ages, cabbage, and other leafy vegetables, were dismissed because they were thought to cause illnesses. The aristocracy of Europe in the 14th to 17th Century detested it, and in Russia, cabbage was only served to the peasants.

Today, the thought and use of cabbage still creates mixed emotions. In North America, it is mainly served as coleslaw. There are hundreds of other ways to prepare this vegetable that are quick, nutritious, and delicious. Cabbage is believed to have anti-cancer and cancer-fighting properties and is high in vitamins C, B1, B2, B3, and D. Prepared the right way, cabbage can be a wonderful addition to any meal.
