Butternut squash is a rich sweet squash that can be served as a side dish, a main dish, or as a soup base. It has a long, slender neck and a bulbous head with a “putty” coloured rind. Its peak season is between September and December. These delicious squashes can be kept at room temperature for up to 1 month or baked and divided into portions, then placed in the freezer to be used throughout the winter.

High in vitamins A and C, this squash can add flavour and nutrition to any meal. To cook butternut squash, cut it in half lengthwise. Place the halves, cut-side down, in a baking pan and add enough water to fill up to ˝ inch of the pan. Bake for 1 to 1 Ľ hours, or until tender. The traditional way to serve this squash is with salt, butter, and brown sugar.
