The french filet green bean may be a mystery to many, but other consider them the best tasting bean of all. These beans are shorter and more slender than the more common varieties. And the best part (other than their great taste)? - they are entirely stringless!

These beans are a gardener’s dream as they can be planted early in May and only take eight weeks to mature. But beware, if you plant them in succession, you may be swamped with beans all summer (although this may not be a bad thing)!

To prepare these beans, snap off the ends and wash them under cool running water. Eat them raw or steam/boil them for 10-12 minutes. Their texture should be tender, but not mushy or fibrous. Drain the beans and add some olive oil or butter, a little salt and pepper and serve. Or, try these scrumptious recipes (listed in our Recipe Archive):
