Also known as Rocket Salad, Italian Cress, and Rucola, Arugula is high in potassium and Vitamin C; Dioscorides described rocket as "a digestive and good for ye belly"! The increasingly popular leaves bring a delicious spice to salads - either mixed with other lettuce and salad greens, or on their own.

Warm, strong flavours such as olive, walnut, hazelnut, grilled onions, fresh figs, red wine and sherry vinegars, and lemon juice work well with arugula...or, try the Rhubarb Dressing, listed in the Salads & Dressings section of our Recipe Archive, for an ideal match with the spicy arugula leaves!
