Bok choy is a mild and tasty member of the cabbage family. Both the stems and the leaves are used in stir-fries, either by themselves or with other vegetables. Add the stems a minute or two before the leaves for even cooking. As with other greens, soak and rinse bok choy well to remove dirt and potential "hitch-hikers"!
