Corn Salad, aka Lamb's Lettuce or Mache, comes to us fresh from Wild Flight Farm. We think this is a terrific baby step toward reducing our dependence on California crops for the winter months!
Here's what "Matthew Bigg's Complete Book of Vegetables" has to say about Corn Salad:
"Value: good source of beta carotene, vitamin C, and folic acid. Very few calories. In spite of its delicate appearance, lamb's lettuce is an extremely hardy plant, particularly valued as a nutritious winter salad crop. Before the appearance of winter lettuce varieties, lamb's lettuce was the main winter salad in Europe."
Re: Culinary Use. "Wash the leaves thoroughly to remove grit and soil. In seventeenth century Europe, lamb's lettuce was often served with cold boiled beet or celery root. The leaves are used as a substitute for lettuce and combine well with it, also complementing fried foods. Leaves can also be cooked like spinach."
