Celeriac is used for its diuretic properties and is useful for people with kidney stones and arthritic conditions. As a tonic, it stimulates the appetite, aids digestion, and supports the lymphatic, nervous, and urinary systems.

To use celeriac, peel away the skin. Julienne or grate, and then marinate celeriac with a vinaigrette for a salad. Or cut into chunks and cook the knob in soups and braised, sauteed or baked dishes.
