Sunchokes (beautiful!  roast with other root veg!)

Roast with other root veggies...or some like to eat them raw in salads. A little goes a long way....and be careful, because these are high in inulin, which is a great pre-biotic for the good bacteria in your gut...but can also cause flatulence if you're not used to digesting these. Like beans, it's best to start with small quantities.
