Sui Choy (aka Chinese Cabbage)

Wonderful in all kinds of soups, noodle salads, stir fries, etc. Grate some carrot, crumble some tofu, toast some cashews or peanuts, and toss with chopped Sui Choy, and, together with some peanut sauce, you have a super-simple Asian salad or filling for salad rolls, etc. Yum!
