Please note: there were some harvesting/handling issues with our first week of corn salad, which resulted in some not-so-nice leaves going out to some customers. We would have discussed the issues with Hermann from Wild Flight, and he has ideas about how to improve on the quality in the coming week.
Hermann also reminds customers that this is not a ready-to-go salad green, and there is a small amount of prep that you will need to do in your own kitchen – simply washing and removing any damaged leaves, as well as the stem base. This is very quick to do, and we hope it will not discourage you from trying the corn salad, as it is a lovely, local salad green that we get to enjoy for a brief time only each year in late winter/early spring!

Corn Salad (also known as "mache") is a lovely, winter-hardy salad green (NOT related to corn in any way!) that we receive with gratitude from Wild Flight Farm in the late winter/early spring each year...precisely at the time when the majority of local storage crops have come to an end and new spring crops are still several weeks away!
Enjoy corn salad on its own as a snack (children love the idea of eating whole little plants...especially with a bit of Little Creek dressing as dip), as a salad (combined with other lettuces or as the "main leaf"), or in sandwiches/wraps.
